Making these squares truly brings me back to my childhood. The filling is sticky and sweet, while the base is rich and buttery – a match made in heaven! They are the perfect treat to enjoy on a cold winter afternoon with a steaming mug of coffee
Walnut Squares
Recipe from my Mom
Makes one 9 inch square pan
Ingredients
Base
- 1/2 cup butter
- 1/3 cup sugar
- 1 cup flour
Filling
- 1 1/2 cups brown sugar
- 2 eggs
- 1 1/3 cups chopped walnuts
- 2 tablespoon flour
- 1/2 teaspoon baking powder
Topping
- 1/2 cup powdered sugar
Method
Heat the oven to 325°F. Line a 9 inch square cake pan with parchment paper and lightly grease the edges.
Work together the ingredients for the base, either in a food processor or using your fingers, to make fine crumbs. Press into the pan and bake for 5 – 8 minutes. Take out of the oven and set aside.
Meanwhile, in a standing mixer combine the eggs and sugar until pale yellow in colour. With the mixer on low add the flour and baking power until just combined. Spread the filling over the cooled crust and place in the oven for 30-35 minutes or until set.
Cool completely on a wire rack before slicing into bars. Dust with powdered sugar.
